STEAMER CLAMS
The mainstay of Downeast Maine. Our rocky coasts are filled with the choicest steamer clams. Steamer Clams are sweet to eat with hot drawn broth and then dipped in savory butter. Just steam them until they pop open and enjoy. They will bring you as close to Maine as you can get without the airfare. We suggest one pound total per person as a side dish.

CULTIVATED MUSSELS
East coast blue mussels have a smooth, dark, blue-black shell. These high-quality sweet black mussels from the eastern sea coast of Maine are the sweetest cultivated rope grown mussels. Mussels can be used in a variety a dishes, sauces, or topped with tomatoes, basil and garlic with a splash of white wine. Average appetizer portion is 1-2lbs. per person.

HIGH QUALITY OYSTERS
All oysters on the eastern coast of the United States are that same oyster. They differ only from the waters they are harvested from. Different estuaries have different flavors. We only use oysters from the coldest waters of Maine. Oysters may also be used in a variety of oyster dishes like Oyster's Rockefeller or fried oysters. They are sweet to eat raw with cocktail sauce, hot sauce, lemon or horseradish. Just open them up and dress them the way you like best and enjoy that wonderful oyster liquor.
Average appetizer portion is about 2-6 oysters per person.

SEA SCALLOPS
Sea scallops are the largest commercially harvested product in its class. The flavor is mild to moderate and the texture is medium to firm. Their sweet rich and succulent taste makes them a favorite with the most discriminating of chefs. The uncooked meat ranges in color from creamy white to tan to pinkish to pumpkin based on the food and minerals available to the scallops in their habitat. Scallops are an excellent source of protein, vitamins and minerals, and are very low in fat. The meat turns opaque when cooked with a firm, lean texture. Wonderful wrapped in bacon, in kabobs on the grill, pan fried, deep fried, or in a casserole dish. Everyone enjoys fresh sea scallops!

FRESH HADDOCK
New England's Choice for Chowder.
Fresh Haddock is a very popular fish, with firm, flaky texture and good flavor. This extremely light and flavorful fish is a favorite in New England. The United States has also developed a love for haddock. Dredging sliced haddock fillets in flour and frying is a popular way to enjoy this delectable fish. The delicate, white meat of the haddock turns extremely flaky and practically dissolves in your mouth. There are many other haddock recipes you can enjoy as well. Due to the versatility of this world-class favorite, you'll also find haddock recipes that call for steaming, broiling, poaching, and more. Due to its delicate texture, haddock is not recommended for grilling. We sell Haddock by the whole side of fish or the fillet. The average fillet weight is 12-16oz., and your average portion per person is about 4-6oz. All Haddock Fillet prices will vary according to the weight.
